Ifumbe (Rwandan Cassava Fritters)
Ifumbe is a Rwandan snack made from cassava flour and other simple ingredients.
Ingredients
- 2 cups cassava flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup sugar
- ½ teaspoon ground cinnamon (optional)
- 1 cup milk
- ¼ cup water
- 1 egg, beaten
- Vegetable oil, for frying
Steps
- In a mixing bowl, combine the cassava flour, baking powder, salt, sugar, and ground cinnamon (if using). Mix well to evenly distribute the dry ingredients.
- Add the milk, water, and beaten egg to the dry ingredients. Stir until a smooth batter forms. The batter should have a slightly thick consistency.
- In a frying pan, heat enough vegetable oil over medium heat for frying.
- Once the oil is hot, drop spoonfuls of the batter into the hot oil, making small fritters. Be careful not to overcrowd the pan; fry in batches if needed.
- Fry the fritters for about 2–3 minutes on each side, or until they turn golden brown and crispy.
- Use a slotted spoon to remove the fried fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
- Serve the ifumbe warm as a tasty snack or dessert.
