Mbatata a Matenda (Malawian Cassava Fritters)
Mbatata a matenda is a popular Malawian snack made from cassava. These cassava fritters are crispy on the outside, soft on the inside, and bursting with flavor.
Ingredients
- 2 cups grated cassava
- 1 egg, lightly beaten
- 1 onion, finely chopped
- 2 green chiles (optional, for heat), finely chopped
- 2 tablespoons cornmeal
- Salt, to taste
- Vegetable oil, for frying
Steps
- In a mixing bowl, combine the grated cassava, beaten egg, finely chopped onion, and finely chopped green chilies (if using).
- Add the cornmeal to the mixture and mix well until everything is evenly combined.
- Season the mixture with salt to taste. Adjust the seasoning according to your preference.
- In a frying pan, heat vegetable oil over medium-high heat.
- Take spoonfuls of the cassava mixture and carefully drop them into the hot oil. Flatten the fritters slightly with the back of the spoon.
- Fry the fritters until they are golden brown and crispy on both sides. Use a slotted spoon to remove them from the oil and place them on paper towels to drain any excess oil.
- Repeat the frying process with the remaining cassava mixture.
- Allow the fritters to cool slightly before serving.
