Ingredients

2 whole lemons, washed
4 whole limes, washed
½ cup (120 ml) white sugar
4 tsp (20 ml) lime juice
Carbonated water, as needed

Steps

Remove the zest from the lemons and limes in strips, leaving behind the bitter white pith.
Combine the sugar and zest in a container, and let this sit in the fridge for 24 hours. The sugar will extract the liquid from the citrus peels and produce a syrupy liquid.
Strain the solids out of the peel and sugar mixture.
Mix the peel and sugar mixture with lime juice. This should produce slightly under ½ cup (120 ml) of syrup.
To make the finished soda, mix 1 volume of syrup with 5 volumes of carbonated water.
